SHL meets Soil to Soul

The Soil to Soul Symposium will take place in Sihlcity from 15 - 17 September. You can expect exciting keynotes, master classes, gourmet-events, a Soil Food Market and much more on the topics of: soil preservation, regenerative agriculture and the link between responsible, healthy and enjoyable nutrition.

At this year's Symposium, there will be a special event for our alumni on Friday, 16 September 2022!

Programme

  • 18:30 - 19:30 | Panel discussion: Self-sufficiency in Switzerland | Papiersaal
    A discussion between three people with controversial ideas and views on the Swiss degree of self-sufficiency: organic guru Urs Niggli, Patricia Krayer, who is intensively dedicated to the question of what a vegan world could look like - and a surprise guest. A discourse on potentials and limits, agriculture and politics.
     
  • 20:00 - 23:30 | Gourmet event: Restaurant «Scalottas Terroir» as guest in the Rüsterei | Rüsterei
    Then the evening becomes both enjoyable and instructive: Chef Hansjörg Ladurner (16 points GaultMillau) is one of the pioneers of terroir cuisine and practices it consistently in the restaurant «Scalottas Terroir» at Hotel Schweizerhof in Lenzerheide. He even grows old potato varieties himself on his own field at an altitude of 1,300 m - in addition to beans and rye - and processes only regional, natural products from farmers and producers who he knows personally. During the evening, his menu will be accompanied by biodynamic wines from innovative winegrowers from the Grisons.

    Another guest of the evening: Marcel Heinrich, the potato king. On the farm Las Sorts - the name means «lot», «fate», «varieties» - he grows 42 different varieties of mountain potatoes. In order to even cultivate the mountain potato in the Albula valley at an altitude of 1,000 m above sea level, a lot of manual work is necessary, which pays off in terms of taste: mountain potatoes have unique cooking properties and find their home in many top kitchens. On the occasion of our alumni event, mountain potatoes from the Albula Valley wilo of course be making an appearance on Hansjörg Ladurner's menu.
